Frédéric Monnet

Ritz-Carlton, Key Biscayne

Frédéric Monnet learned the art of pastry in his childhood home of Vonnas, in the Rhone Alpes of France. Monnet began his formal training with mentor and Master Pastry Chef, Gérard Darbon, in Thoissey, France. Monnet then went on to work at top hotels in Europe, including La Belle Époque in Bellegarde, France and Le Meridien in London. Eventually, he moved to the US to the Givenchy Hotel & Spa in Palm Springs, CA. From there, he began his Ritz-Carlton career at the Five Diamond Ritz-Carlton in Marina del Rey. Since then, Monnet has been with the Ritz-Carlton, Key Biscayne since its opening in 2001.
